Come on, Starbucks! 💸 So, I decided to take matters into my own hands and create a copycat recipe that’s not only just as delicious but also way more budget-friendly. Plus, you can make a whole batch in one go! 🙌 Get ready for fluffy, cheesy, bacon-y goodness that’ll have you skipping the Starbucks drive-thru and heading straight to your kitchen. Let’s dive in!
Ingredients:
Eggs: Eggs are the foundation of this recipe, providing structure and a rich source of protein. They create the fluffy, custard-like texture that makes these egg bites so irresistible. Starbucks Copycat Bacon & Gruyère Egg Bites Recipe – Easy Meal Prep Breakfast
Ingredients
- 6 whole eggs
- 1 cup cottage cheese
- 1 cup shredded Gruyere cheese
- 1 tsp hot sauce
- Salt and pepper to taste
- 4 slices bacon

- Preheat the oven: Preheat your oven to 300°F (150°C). For that super tender texture, we’re going to use a steam bath technique. Place a shallow dish filled with boiling water on the lower rack of your oven. This keeps the egg bites soft, just like Starbucks does!
- Blend the egg mixture: In a food processor or blender, combine 6 whole eggs, 1 cup of cottage cheese, 1 cup of shredded Gruyère, 1 teaspoon of hot sauce (totally optional but adds a nice touch of heat), and salt and pepper to taste. Blend on high for about 30 seconds to 1 minute until the mixture is smooth and creamy. The cottage cheese makes the bites extra fluffy and rich without adding too many extra calories.
- Prepare your muffin tray: Grease a muffin tray well. Pro tip: If you have a silicone muffin pan, use that! It’ll make removing the egg bites a breeze. If you don’t, be sure to grease your metal muffin pan thoroughly or use paper muffin liners. Fill each muffin cup about ¾ full with the blended egg mixture.
- Add the bacon: Cook the bacon until it’s crispy – you can do this on the stovetop, in the microwave, or even in the oven. Once cooked, chop it into small pieces. Sprinkle the chopped bacon evenly over each egg-filled muffin cup. The crispy bacon adds that perfect savory bite.
- Bake the egg bites: Place your muffin tray on the oven rack above the shallow water dish. The steam from the water helps to keep the egg bites soft and velvety. Bake for 25-30 minutes, until the eggs are set, slightly puffed, and just starting to turn golden on top. You’ll know they’re done when they don’t jiggle in the center when gently shaken.
- Let them cool and remove: Once baked, remove the egg bites from the oven and allow them to cool for a few minutes. Use a knife to gently loosen the edges before popping them out of the muffin tray. If you used a silicone tray, they should slide right out!
