You can drink it because it is your dog’s birthday, your half birthday, your cat’s adoption-aversary, ANYTHING. Every day deserves a little celebration energy and this latte delivers.
And the BEST part? Making this at home is genuinely cheaper than Starbucks. Like significantly cheaper. I did the math (full breakdown below) and we are talking under a dollar per latte at home versus 6 to 7 bucks at the coffee shop. PLUS you can pronounce every single ingredient, no mystery syrups with 47 ingredients on the back of the bottle. Just real sugar, real extracts, real magic.

Almond Extract Just an eighth of a teaspoon, but please do not skip it. That tiny amount of almond is what gives the syrup that classic boxed cake mix vibe, it is the secret to authentic birthday cake flavor. More than 1/8 tsp will overpower everything though, so go light.

Ingredients
For the Birthday Cake Syrup
- 1 cup granulated sugar
- 1 cup water
- 1 tsp cake batter extract
- ⅛ tsp almond extract
- 1 tsp vanilla extract
For the Latte (Iced or Hot)
- 1 oz birthday cake syrup
- 6 oz milk of choice
- 2 oz espresso or strong coffee
- Ice for iced version
- Optional toppings: whipped cream cold foam, rainbow sprinkles
Instructions
Make the Birthday Cake Syrup
- Add the granulated sugar and water to a small saucepan over medium heat. Stir to combine.
- Bring to a gentle simmer and let cook for 5 to 10 minutes, stirring occasionally, until the sugar is fully dissolved and the mixture is slightly thickened. You do NOT want it to boil hard, just a steady simmer.
- Remove from heat and let cool for 2 to 3 minutes (you do not want to add the extracts to a roaring hot syrup or the alcohol in them will cook off).
- Stir in the cake batter extract, almond extract, and vanilla extract. Give it a good whisk to combine.
- Let the syrup cool completely to room temperature, then transfer to a glass jar or bottle. Store in the fridge for up to 3 weeks.
Iced Birthday Cake Latte
- Fill a tall glass with ice all the way to the top.
- Add 1 oz of the birthday cake syrup over the ice.
- Pour in 6 oz of cold milk.
- Add the 2 oz espresso shot on top (the layering looks SO pretty).

- Heat your milk in a small saucepan or in the microwave until warm and steamy. Froth it if you have a frother, this makes it feel SO coffee shop.
- Add 1 oz of the birthday cake syrup to the bottom of your favorite mug.
- Pour in the 2 oz espresso shot and stir to combine with the syrup.
- Top with the warm milk (and the foam if you frothed it).
- Sprinkle a few rainbow sprinkles on top if you want, and sip immediately while it is hot and dreamy.

Tips and Tricks
- The almond extract is small but MIGHTY. Stick to 1/8 tsp or it will completely overpower the cake batter flavor.
