- Add the eggs, vanilla, and pumpkin. Add the eggs, vanilla extract, and the whole can of pumpkin puree. Whisk until everything is completely combined and silky.
- Mix the dry ingredients. In a separate bowl, whisk together the flour, baking soda, pumpkin spice, and salt. Whisking first spreads the baking soda and spices evenly, so every muffin rises and tastes the same.
