You guys, I am DEEP in my Birthday Bake Series and having the time of my life with it. I have been brainstorming nonstop about all the birthday-flavored treats I want to make this season, and the second I started thinking about what to bake next, this one was a complete no brainer. A soft and chewy birthday cake cookie? Inspired by my famous no chill holiday sugar cookies but with the most fun birthday twist? YES PLEASE.
If you have made my no chill soft and chewy sugar cookies before, you already know how dreamy they are. Pillowy, melt-in-your-mouth soft, ready in 30 minutes from start to finish, and absolutely NO chilling required. This recipe takes that same foolproof base and turns it into the most celebratory cookie ever. Cake batter extract, a generous pile of rainbow sprinkles, and a sparkly coating of granulated sugar on the outside? It is honestly perfection.
These cookies make every single day feel like your birthday. I mean, come on. SPRINKLES. Sprinkles are the best. They make everything more fun, more colorful, and more delicious. There is just something so magical about biting into a warm, soft cookie that is bursting with rainbow color. You cannot help but smile.
P.S. Do not skip the granulated sugar roll before baking! That little sparkle of sugar on the outside gives these cookies the cutest crackly tops and adds the perfect tiny crunch that contrasts so beautifully with the pillowy soft center. It is what takes them from good to GREAT.

Ingredients Needed
Unsalted Butter Make sure your butter is fully softened to room temperature before you start. This is non-negotiable for a great cookie texture! Cold butter will not cream properly and your cookies will end up dense instead of light and pillowy.
Granulated Sugar Provides the sweetness and helps create those gorgeous crackly tops we all love. We use it both in the dough AND as a sparkly coating on the outside, so make sure you have plenty on hand.
Vanilla Extract A full tablespoon of vanilla! Yes, a tablespoon. It sounds like a lot, but it is the secret to that bakery-style flavor that makes these cookies taste so much more special than your average sugar cookie.
Cake Batter Extract This is the MAGIC ingredient that transforms a regular sugar cookie into a birthday cake cookie. You can find it on Amazon or at most baking supply stores. It is honestly worth the splurge for that nostalgic boxed-cake-mix flavor.
Egg and Egg Yolk The combination of one whole egg plus an extra yolk is my secret to the chewiest, softest cookies ever. The extra yolk adds richness and fat without too much liquid, which keeps the cookies dense and chewy instead of cakey.
All Purpose Flour Provides the structure for the cookies. Make sure to spoon and level your flour into the measuring cup so you do not accidentally pack in too much, which can lead to dry cookies.
Cornstarch This is my secret weapon for the SOFTEST cookies. Just one tablespoon makes a huge difference in keeping these cookies tender and pillowy for days. Do not skip it!
Baking Powder Gives the cookies the perfect lift so they bake up puffy and soft instead of flat and crispy. One and a half teaspoons is the sweet spot.
Salt Balances out all the sweetness and makes every flavor pop. Even just a half teaspoon makes a noticeable difference.
Rainbow Sprinkles The whole reason these cookies feel like a party. Use the long jimmies kind, NOT nonpareils, because nonpareils will bleed their color into the dough and turn it gray. We want vibrant rainbow colors, not muddy ones!
Granulated Sugar for Rolling That extra quarter cup of sugar is for rolling the dough balls in before baking. It gives you those cute sparkly crackly tops that make these cookies look so bakery-perfect.
Substitutions and Modifications
- Swap the rainbow sprinkles for any color combination to match a theme (pastels for spring, red and pink for Valentine’s Day, red and green for Christmas, orange and black for Halloween)
- If you cannot find cake batter extract, almond extract makes a great substitute for a different but equally lovely flavor
- For a gluten free version, swap the all purpose flour for a 1:1 gluten free flour blend
- Roll the cookies in colored sanding sugar instead of granulated sugar for an even sparklier finish
- Drizzle with a simple vanilla glaze after baking for an extra special touch
Why You’ll Love This Recipe
- This is a NO CHILL cookie recipe, which means it comes together in just 30 minutes from start to finish, no waiting around required
- Soft, chewy, and pillowy in the middle with the cutest sparkly sugar coating on the outside

Ingredients
- 1 cup unsalted butter softened
- 1 ¼ cups granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon cake batter extract
- 1 large egg
- 1 large egg yolk
- 2 ½ cups all purpose flour
- 1 tablespoon cornstarch
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup rainbow sprinkles
- ¼ cup granulated sugar for rolling
Instructions
- Preheat your oven to 350°F and line two large baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and granulated sugar together on medium speed for 3 minutes until light, fluffy, and pale in color.
- Add in the egg, egg yolk, vanilla extract, and cake batter extract. Beat for 1 more minute, scraping down the sides of the bowl as needed, until everything is fully combined and smooth.
- In a separate bowl, whisk together the all purpose flour, cornstarch, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and gently fold together with a spatula until just combined. Do not overmix!
- Fold in the rainbow sprinkles just until evenly distributed throughout the dough. Work quickly so the sprinkle colors do not bleed.
- Pour the quarter cup of granulated sugar into a small bowl for rolling.
- Scoop the dough into 24 equal sized balls and roll each one in the granulated sugar to coat completely.
- Place the sugar-coated dough balls on the prepared baking sheets, leaving about 2 inches between each one.
- Bake for 10 to 12 minutes. They will look slightly underbaked when you pull them out, but TRUST the process! This is exactly what we want.
- Leave the cookies on the hot baking sheet for 30 minutes after pulling them out of the oven. They will continue to cook and set up perfectly into that soft, chewy texture we are after.
- After 30 minutes, transfer to a wire rack or serving plate and ENJOY! These are heaven warm or at room temperature.
Storage Instructions
- Counter: Store in an airtight container at room temperature for up to 4 days. They stay incredibly soft thanks to that cornstarch magic!
- Fridge: Store in an airtight container in the refrigerator for up to 1 week. Let them come to room temperature before serving for the best texture.
- Freezer: Freeze the baked cookies in a single layer until solid, then transfer to a freezer bag for up to 3 months. Thaw at room temperature for about 20 minutes. You can also freeze the dough balls (rolled in sugar) and bake straight from frozen, just add 1 to 2 extra minutes to the bake time.
Tips and Tricks
- Pull the cookies out of the oven when they look slightly underdone! They keep cooking on the hot pan and that is the secret to that soft, chewy center
- Use long jimmies sprinkles, NOT nonpareils, to prevent the colors from bleeding and turning your dough gray
- Make sure your butter is truly softened to room temperature for the fluffiest, lightest cookie base
- Do not skip rolling the dough balls in sugar! This creates those gorgeous sparkly crackly tops that make these cookies look bakery-perfect
FAQ
Why do my cookies look underbaked when I pull them out?
That is exactly what we want! These cookies finish setting up on the hot pan over the next 30 minutes. Pulling them slightly early is the key to that soft, chewy, pillowy texture. If you wait until they look fully baked, they will be overdone and hard once cooled.
Can I really skip the chill time?
YES! That is the beauty of this recipe. The dough holds its shape perfectly without chilling, which makes this such a quick and easy go-to cookie when you need something delicious in 30 minutes.
Can I make these without cake batter extract?
You can, but you will lose that signature birthday cake flavor. Try almond extract as a substitute, or just double the vanilla for a classic sugar cookie vibe.
Why are my sprinkles bleeding into the dough?
You are likely using nonpareils (the tiny round ball sprinkles) instead of long jimmies. Nonpareils have a thinner coating that releases color almost immediately. Stick with jimmies for vibrant, non-bleeding sprinkles.
Can I make the dough ahead of time?
Yes! You can store the dough in the fridge for up to 2 days before baking. Just let it sit at room temperature for about 15 to 20 minutes before scooping so it is easier to work with.
Can I freeze the cookie dough balls?
Absolutely! Roll the dough into balls, coat in sugar, then freeze them on a baking sheet until solid. Transfer to a freezer bag and bake straight from frozen, adding 1 to 2 extra minutes to the bake time.
