If you’re looking for the ultimate weekend brunch recipe, look no further because this Easy Bacon and Cheese Quiche is it. You know those long weekends where you actually have the time to make something extra special? Yeah, this is the recipe you’re going to want to pull out. It’s got everything—a buttery, flaky crust, crispy bacon, caramelized veggies, and a creamy, cheesy filling that’ll have everyone swooning. I mean, it’s so good, it might just steal the show! And the best part? It’s ridiculously easy but looks like you spent hours in the kitchen. I paired mine with a simple fruit salad, and let me tell you, it was a match made in brunch heaven. Whether you’re hosting or just treating yourself, this quiche will seriously impress—and it’ll disappear fast, trust me!

Ingredients:
Store-Bought Pie Crust: The base of every great quiche starts with a flaky, buttery crust. By using a store-bought pie crust (I used Pillsbury), you’re saving time while still getting that perfect golden crust that complements the rich filling. It’s convenient, foolproof, and creates the perfect vessel for all those delicious ingredients. Plus, with minimal effort, you’re already halfway to brunch bliss!
Thick-Cut Bacon: Bacon adds a smoky, savory depth to the quiche. Thick-cut bacon, in particular, holds up better in the baking process, keeping its satisfying texture and flavor even after mixing with the creamy filling. It brings that irresistible crispness and saltiness that balances perfectly with the creamy eggs and cheese.
Bell Peppers: Bell peppers not only add a pop of color to your quiche, but they also bring a sweet, mild flavor that pairs wonderfully with the savory bacon and cheese. They soften beautifully when sautéed and provide a subtle crunch that makes each bite more interesting. Plus, they’re packed with vitamins and fiber, giving your quiche a sneaky boost of nutrients.
Yellow Onion: Onions bring a mellow sweetness to the dish after being sautéed with the bacon and bell peppers. As they caramelize, they add a rich, almost buttery flavor that enhances the depth of the quiche. Their slight bite rounds out the filling, balancing the richness of the cheese and cream.
Gruyere Cheese (or any cheese): Gruyere is a classic for quiche, offering a nutty, creamy flavor that melts beautifully into the eggs. If you don’t have Gruyere on hand, feel free to use your favorite cheese—cheddar, Swiss, or even mozzarella will work. The cheese adds richness and binds the filling together, giving each slice that melty, gooey goodness we all crave.
Eggs: Eggs are the star of any quiche—they form the custard-like base that holds everything together. They become light and fluffy in the oven while soaking up all the delicious flavors from the bacon, cheese, and veggies. Eggs also provide a hit of protein, making the quiche satisfying and nutritious.
Whole Milk & Heavy Cream: The combination of whole milk and heavy cream creates the silky, smooth texture of the quiche. The cream adds richness, while the milk lightens it up, ensuring the filling isn’t too dense. This duo makes the quiche feel indulgent without being overly heavy.
Hot Sauce: Hot sauce is the secret ingredient that adds just a little zing without overwhelming the dish. It enhances the flavors, giving a slight kick that keeps each bite interesting. You can adjust the amount to your liking, but don’t skip it—trust me, it takes the quiche to the next level!
What is a Quiche?

Ingredients
- 1 store-bought pie crust I used Pillsbury from the refrigerator section; it comes with two sheets, but you’ll only need one
- ½ lb thick-cut bacon
- 2 bell peppers, diced
- ½ large yellow onion, diced
- 1 cup Gruyere cheese or your preferred cheese
- 4 eggs
- ½ cup whole milk
- ½ cup heavy cream
- 1 tsp hot sauce optional but adds a nice kick
Instructions
- Preheat your oven to 350°F (175°C).
- Blind bake the crust: Roll out your store-bought pie crust and fit it into a pie dish. Use a fork to prick the bottom to prevent puffing. Line the crust with parchment paper and fill it with baking beans, pie weights, or rice to keep it from bubbling up. Bake for 15 minutes, then remove the weights and parchment paper. Set the crust aside.
- Prepare the filling: While the crust is baking, sauté the diced bacon over medium heat in a skillet. Once it starts to release fat, add the diced bell peppers and onions. Cook until the bacon is crispy, and the veggies are softened and caramelized (about 8–10 minutes). Remove from heat and set aside.
- Assemble the Easy Bacon and Cheese Quiche: Scatter the cooked bacon, peppers, and onions evenly over the baked pie crust. Grate the Gruyere cheese directly over the filling.

- Grate the Gruyere cheese directly over the filling.
- Whisk the egg mixture: In a bowl, whisk together the 4 eggs, ½ cup of whole milk, ½ cup of heavy cream, and the teaspoon of hot sauce. Season lightly with salt and pepper (optional). Pour this mixture over the bacon and cheese in the pie crust.
- Bake the Easy Bacon and Cheese Quiche: Lower the oven temperature to 325°F (160°C) and bake the quiche for 40–50 minutes, or until the egg mixture is fully set. You’ll know it’s done when the center no longer jiggles and a toothpick inserted comes out clean.
- Rest and serve your Easy Bacon and Cheese Quiche: Let the quiche rest for at least 10 minutes before slicing into it. This step helps it set fully and makes it easier to cut.
