This past week, I went all out for my boyfriend’s birthday. And by all out, I mean if it wasn’t birthday cake-flavored, I didn’t make it. I basically turned my kitchen into a cake batter wonderland—cookies, pancakes, even my morning coffee somehow had cake vibes. But these Cake Batter Cookie Bars? Ohhh, they stole the show.
Soft, chewy, loaded with sprinkles, and topped with the creamiest cream cheese frosting ever—these bars were an instant hit. And let’s be real, they’re way easier than making an actual birthday cake but still bring all that nostalgic, funfetti magic. Safe to say, these are now on repeat in my house! So, if you love cake batter anything (who doesn’t?!), buckle up. This one’s a keeper. 🎂✨

Ingredients:
Unsalted Butter –
Butter is the heart and soul of these bars. It gives richness, structure, and that melt-in-your-mouth texture. Using unsalted lets you control the salt level, but if you only have salted butter, just reduce the added salt a smidge.
Granulated Sugar –
Sweetness? Check. Tender texture? Check. It also helps create that perfectly chewy center while giving just a slight crisp to the edges.
Large Egg –
This little guy binds everything together and adds moisture. No egg? Try a flax egg (1 tbsp ground flax + 2.5 tbsp water), but the texture will be a little different.
Pure Vanilla Extract–
Vanilla is a background player here, enhancing all the flavors. The good kind (real, not imitation) makes a difference!
Cake Batter Extract –
The MVP of this recipe! This is what makes these bars taste like you just licked the spoon from a fresh Funfetti cake mix (without judgment). Can’t find it? Use almond extract or extra vanilla, but for true cake batter flavor, this is a must.
All-Purpose Flour –
Gives the bars structure while keeping them soft. Want gluten-free? Swap with a 1:1 gluten-free blend.
Baking Powder –
Helps these bars rise ever so slightly while keeping them dense and chewy.
Salt –
Balances the sweetness. Never skip it!
Rainbow Sprinkles–
The life of the party! Use jimmies (the long ones) for best results. Nonpareils (the tiny round ones) can bleed and turn your batter into a tie-dye situation.
Cream Cheese –
Tangy, creamy, and smooth—this takes the bars to another level of deliciousness.
Powdered Sugar–
Sweetens and thickens the frosting to that perfect spreadable consistency.

What is Cake Batter Extract? (& Substitutions) 🎂
Cake batter extract is the magic ingredient that gives these bars their signature Funfetti flavor. It’s a blend of vanilla, almond, and buttery flavors that mimic cake mix.
Can’t find it? Try these swaps:
- 1/2 tsp almond extract + 1/2 tsp vanilla extract – The closest alternative!
- Vanilla extract only – Won’t be as strong, but still delicious.
- Melted butter + a pinch of salt – Helps mimic that rich cake mix flavor.

Cake Batter Cookie Bars – Soft, Chewy & Frosted with Cream Cheese Bliss
Ingredients
For the Frosting
- 4 oz cream cheese room temp
- 2 tbsp unsalted butter room temp
- ½ tsp vanilla extract
- 1 cup powdered sugar
Instructions
1. Prepare Your Pan
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal. Leave some overhang on the sides for lifting out later!
2. Cream the Butter & Sugar
- In a large mixing bowl, beat the butter and sugar until light and fluffy (about 2 minutes). This step is key for soft, chewy bars!
3. Add Wet Ingredients
- Mix in the egg, vanilla extract, and cake batter extract until smooth and combined.
4. Incorporate Dry Ingredients
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing just until combined.
5. Stir in Sprinkles
- Gently fold in the sprinkles—don’t overmix, or the colors might bleed!
6. Bake
- Press the dough evenly into your prepared pan. Bake for 20 minutes, or until the edges are golden but the center looks slightly underbaked. Trust me, underbaking is key for ultimate chewiness!
7. Cool Completely
- Let the cake batter cookie bars cool in the pan for 30 minutes before frosting. Rushing this step = frosting meltdown.
8. Make the Frosting
- Beat the cream cheese and butter together until smooth. Gradually add powdered sugar, then vanilla, mixing until fluffy.
9. Frost & Serve the Cake Batter Cookie Bars
- Spread the frosting evenly over the cooled cake batter cookie bars. Add more sprinkles on top because why not? Slice, serve, and enjoy!

Tips & Tricks for the Best Cake Batter Cookie Bars 🔥
- Slightly underbake for chewiness! The center should look just slightly underdone when you take them out. They’ll finish setting as they cool.
- Let them cool completely before frosting! Otherwise, the frosting will melt into a gooey mess (still tasty, but messy).
- Use any brand of sprinkles – Jimmies (the longer ones) work best because they don’t bleed as much as nonpareils.
- Want even more cake batter flavor? Add an extra ½ teaspoon of cake batter extract!
- Skip the chilling! No need to refrigerate the dough—these cake batter cookie bars bake perfectly straight away.
Storage Instructions
Storage & Reheating 🍪
- Store the cake batter cookie bars in an airtight container at room temp for up to 3 days or in the fridge for up to a week.
- Freeze (frosted or unfrosted) for up to 2 months. Thaw at room temp before enjoying.
- Reheat in the microwave for 10 seconds if you want that fresh-out-of-the-oven softness.
