Regular fresh grocery store blueberries are my second pick. They’re bigger, juicier, and bake up beautifully. Frozen blueberries also work, but toss them in straight from the freezer and don’t thaw them first or they’ll bleed purple into your custard. Whatever you do, taste a berry before baking. If they’re sour or bland, your buns will be too. Sweet, plump berries are non-negotiable.

Ingredients
For the Dough
- ¾ cup whole milk, warmed to 100–110°F
- 2 tsp active dry yeast
- ¼ cup granulated sugar
- 1 large egg
- 2 ½ cups bread flour or all-purpose flour
- 1 tsp kosher salt
- 3 tbsp unsalted butter, room temperature
For the Custard Filling
- 8 oz cream cheese, room temperature
- 2 tbsp heavy cream
- 1 tsp vanilla extract
- 1 cup powdered sugar
For the Blueberry Topping
- ¼ cup blueberry jam store – bought or made by simmering blueberries + granulated sugar
- 1 cup fresh blueberries
Egg Wash
- 1 egg, beaten
For the Crumble Topping
- 3 tbsp unsalted butter, melted

- Let your dough rise in a warm, draft-free spot. I like to turn my oven on for 2 minutes, turn it OFF, and let the dough rise in there.

- In the morning, pull the dough out of the fridge and let it sit on the counter for 30 to 45 minutes while your oven preheats.
- Shape the buns, fill them with the custard and blueberries, and arrange them on your baking sheet.
- Add the crumble topping right before baking. Don’t add it the night before or it’ll get soggy.

Absolutely!! I love making this into minis. By dividing the dough into 12 equal sized balls. Then baking for 14-18 minutes. All of the other steps are the exact same.
Can I use frozen blueberries instead of fresh?
Yes! Don’t thaw them first. Toss them in straight from the freezer or they’ll turn the custard purple. You may need to add 2 to 3 extra minutes of bake time to make sure the centers cook through properly.
My dough isn’t rising. What went wrong?
Nine times out of ten, it’s the yeast. Your milk needs to be 100 to 110°F. Any hotter and you kill the yeast, any cooler and it won’t activate. If your yeast didn’t get foamy after 5 to 10 minutes in the milk, start over with fresh yeast. Also check the expiration date on your yeast jar.
Can I make these gluten-free?
A 1:1 gluten-free flour blend with xanthan gum should work for the dough and crumble. The texture will be slightly denser than the original but still soft and delicious. Just know that gluten-free yeasted doughs can be a little trickier, so don’t expect quite the same fluffy bakery rise.
Why did my custard leak out while baking?
