I cannot believe how fast this week has flown by, but I am ending it on the highest, sprinkliest note possible with these Birthday Cake Rice Krispie Treats. They are gooey, buttery, packed with cake batter flavor, drowning in rainbow sprinkles, and finished with the prettiest white chocolate drizzle. Basically a celebration in bar form.
The best part? They are NO-BAKE. After a full week of preheating ovens and timing things and setting alarms, I needed this little treat in my life. You melt some marshmallows on the stovetop, stir in cake mix and a million sprinkles, press into a pan, drizzle, done. We are talking 45 minutes start to finish, and most of that is just waiting for them to set.
These were the perfect filler item in my birthday home café all week long. They sat on the counter looking absolutely adorable next to the muffins and the cookies and the cake, and they got picked up first every single time. They taste like funfetti cake and gooey rice krispie treats had a baby, and that baby is BEAUTIFUL. They are easy enough for a Tuesday afternoon, cute enough for a real birthday party, and they will make you feel like a kid again the second you take a bite.
P.S. Drizzle the white chocolate AFTER you cut them, not before! If you cut through hardened chocolate it just shatters and flakes everywhere. Pop the cut squares on a wire rack, drizzle, and you’ll get those clean bakery-style stripes every single time.

- Mini Marshmallows The whole structure of these treats. We use them two ways: most of them get melted into the gooey marshmallow base, and the rest get folded in OFF the heat to keep their shape. - Unsalted Butter Helps the marshmallows melt smoothly and adds that classic rich rice krispie treat flavor. Use unsalted so you can control the salt yourself, since cake mix already has some.
- Boxed Cake Mix This is the magic ingredient. Use it DRY, straight from the box, no additional ingredients added. It is what gives these treats that unmistakable funfetti box-mix flavor that nothing else can replicate. Any vanilla, white, or yellow cake mix works great.

- Add the Rice Krispies cereal and the remaining 6 oz of mini marshmallows. Fold gently until the cereal is fully coated.
