Ingredients

  • 1 package Thin Mint cookies
  • 4 oz cream cheese room temperature
  • 1 cup semi sweet chocolate chips or candy melts
  • 1 tsp coconut oil optional
  • green sprinkles optional

Instructions

  • Add Thin Mint cookies and cream cheese to a food processor.
  • Pulse until fully combined and the mixture forms a smooth paste.
  • Roll the mixture into small truffle balls and place on a parchment lined baking sheet.
  • Melt chocolate chips and coconut oil in the microwave in 30 second increments until smooth.
  • Dip each truffle into the melted chocolate and place back on the baking sheet.
  • Top with green sprinkles if desired.
  • Let truffles set for about one hour in the refrigerator before serving.
