Ingredients

package Thin Mint cookies
4
oz
cream cheese
room temperature
1
cup
semi sweet chocolate chips or candy melts
1
tsp
coconut oil
optional
green sprinkles
optional
Instructions
Add Thin Mint cookies and cream cheese to a food processor.
Pulse until fully combined and the mixture forms a smooth paste.
Roll the mixture into small truffle balls and place on a parchment lined baking sheet.
Melt chocolate chips and coconut oil in the microwave in 30 second increments until smooth.
Dip each truffle into the melted chocolate and place back on the baking sheet.
Top with green sprinkles if desired.
Let truffles set for about one hour in the refrigerator before serving.
