Triple Chocolate Chip Cookies Recipe
Ingredients
- 1 cup unsalted butter
- 1 cup light brown sugar
- ⅓ cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tbsp vanilla extract
- 2 ¼ cups all purpose flour
- 1 tbsp cornstarch
- 1 tsp baking powder
- ¾ tsp salt
- ½ cup semi sweet chocolate chips
- ½ cup dark chocolate chunks
- ½ cup white chocolate chips
- flaky sea salt for topping
Instructions
- Brown the butter in a saucepan over medium heat stirring constantly until golden and nutty. Pour into bowl and cool 10 minutes.
- Whisk in brown sugar and granulated sugar until glossy.
- Add egg, egg yolk, and vanilla. Whisk until smooth and thick.
- In another bowl combine flour, cornstarch, baking powder, and salt.
- Fold dry ingredients into wet until just combined.
- Fold in semi sweet chips, dark chunks, and white chips.
- Chill dough 30 to 60 minutes.
- Scoop large dough balls onto parchment lined baking sheet.
- Bake at 350°F for 10 to 12 minutes until edges set and centers soft.
- Tap pan on counter and sprinkle flaky salt.
- Cool 10 minutes and try not to eat three immediately.

- Let the brown butter cool about 10 minutes before mixing or the eggs can cook and the dough becomes greasy.
- The dough should look glossy and soft, not oily. If it feels loose, chill it 30 to 60 minutes before baking.
- Slightly underbake the cookies. They will finish setting on the pan and stay chewy in the center.
- For bakery style ripples, tap the baking sheet on the counter right after removing from the oven.
- Press a few extra chocolate pieces on top of the dough balls before baking for prettier cookies.
- Use a light colored pan for browning butter so you can see when the milk solids turn golden.
