You know those nights when the sweet tooth hits hard, but the idea of making a whole batch of brownies feels like way too much commitment? Yeah. Same. That’s exactly how this recipe was born.
I wanted something quick, chocolatey, and cozy without ending up with an entire pan of brownies calling my name all week. So I took my single serve cookie base, gave it a brownie glow-up, and boom. These little fudgy brownies became a staple in our house. I usually make them for me and my boyfriend when we want dessert but don’t want leftovers staring us down the next morning.
They’re rich, gooey, perfectly portioned, and begging to be topped with ice cream, extra chocolate chips, and sprinkles if you’re feeling fun (which I always am). Best part? You can make them in the microwave in about 2 minutes or bake them in the oven if you want that classic brownie vibe.

Single Serve Fudgy Brownie (Ready in 2 Minutes or Oven Baked for Two!)
Ingredients
- 3 tbsp unsalted butter melted
- 2 tbsp light brown sugar packed
- 2 tbsp granulated sugar
- 1 large egg yolk
- ½ tsp vanilla extract
- 2 tbsp all-purpose flour
- 3 tbsp unsweetened cocoa powder
- ⅛ tsp salt
- ¼ cup semi-sweet chocolate chips or M&Ms, Oreos, Biscoff cookies, etc.
Instructions
- If baking, preheat oven to 350°F (175°C). Lightly grease two small ramekins or two muffin wells.
- In a small bowl, whisk together melted butter, brown sugar, and granulated sugar until glossy and smooth.
- Add egg yolk and vanilla extract and mix until fully combined.
- Stir in flour, cocoa powder, and salt just until combined. Do not overmix.
- Fold in chocolate chips or desired mix-ins.
- Divide batter evenly between the two ramekins or muffin wells.
Oven Method
- Bake at 350°F for 20 to 22 minutes, until edges are set and centers are slightly soft.
Microwave Method
- Microwave each brownie for about 2 minutes total, checking after 60 seconds and then in 20 to 30 second increments. Centers should look just set but still gooey.
- Let cool for a few minutes before serving. Top with ice cream, extra chocolate chips, and sprinkles if desired.
