Ingredients
Crust
- 2 cups crushed Oreo cookies about 24-26 Oreos
- ½ cup unsalted butter, melted
Filling
- 24 oz cream cheese, room temperature
- ¾ cup granulated sugar
- 1 cup sour cream, room temperature
- 4 large eggs, room temperature
- 1 tbsp vanilla extract
- 2 cups Nutella
Ganache Topping
- 1 cup heavy whipping cream
- 1 cup Nutella
- 5 ferrero Rocher candies, chopped
Instructions
- Preheat your oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper.
- In a food processor or blender, pulse Oreos into a fine crumb consistency. You’re looking for a texture close to flour.
- Mix the Oreo crumbs with melted butter until well combined.
- Press this mixture evenly into the bottom of the springform pan to form a crust.
- Bake the crust for 10 minutes, then set aside to cool.
- In a large mixing bowl, beat the cream cheese until light and fluffy (2-3 minutes).
- Add the sugar and sour cream, mixing until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract and then fold in the Nutella until everything is creamy and combined.
- Tip: Be gentle with the mixing once the eggs are added; overmixing can lead to cracks in the cheesecake.
- Wrap the outside of the springform pan in two layers of aluminum foil, making sure the foil goes up the sides to prevent water from leaking in.
- Place the cheesecake in a large roasting pan, then fill the roasting pan with about an inch of hot water, creating a “bath” around the cheesecake.
- Why use a water bath? This setup creates a humid environment, allowing the cheesecake to bake evenly and prevents cracking on top.
