All you need to do is chop, toss, bake, drizzle, and boom—you’ve got a meal that tastes like you put way more work into it than you actually did.
It’s perfect for meal prep (I make it on Sundays and look forward to it every single day of the week) or an easy weeknight dinner when you don’t want to spend hours in the kitchen. Between the caramelized sweet potatoes, roasted Brussels sprouts, juicy chicken, and spicy-sweet honey drizzle—this is basically my dream sheet pan dinner.
And let’s be real: anytime feta and jalapeños are involved, you already know it’s going to be good.

Tips and Tricks

Don’t overcrowd the pan. Spread everything into a single layer so your chicken and veggies roast instead of steaming. Use two sheet pans if needed.

Cut everything evenly. Keep your sweet potatoes, chicken, and veggies roughly the same size so they cook evenly.

Season in layers. Toss your sweet potatoes first, then add the rest with the remaining seasoning mix for the most flavorful bites.

Check your chicken. Cube sizes vary, so use a meat thermometer and make sure it reaches 165°F (74°C).

Broil at the end. Don’t skip this step—it caramelizes the honey, softens the feta, and takes the whole dish from “yum” to “holy wow.”

Hot Honey Sheet Pan Chicken (Easy Weeknight Dinner or Meal Prep!)
Ingredients
- 2 cups sweet potatoes, peeled and diced
- 2 cups Brussels sprouts, quartered or broccoli/veggie of choice
- ½ cup red onion, thinly sliced
- 1 lb chicken breast, cubed
- ⅛ cup honey
- 2 –3 tbsp olive oil
- ¼ cup feta cheese, crumbled
- 1 jalapeño, thinly sliced
- 1 tsp paprika
- ½ tsp chili powder
- 1 tsp cumin
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper or lightly grease it with olive oil.
- Prep the seasoning mix. In a small bowl, combine paprika, chili powder, cumin, pepper, and salt.
- Roast the sweet potatoes first. Add diced sweet potatoes to the sheet pan. Drizzle with 1 tbsp olive oil and sprinkle with about half of the seasoning mix. Toss well to coat. Spread into an even layer and roast for 20 minutes.
- Add the veggies and chicken. After 20 minutes, remove the sheet pan from the oven. Add the Brussels sprouts, red onion, and cubed chicken. Drizzle with 1–2 tbsp olive oil and sprinkle on the remaining seasoning mix. Toss everything together until evenly coated.
- Roast again. Return the sheet pan to the oven and bake for another 15 minutes, or until chicken is cooked through (165°F/74°C internal temp) and veggies are tender.
- Finish with hot honey. Remove the pan from the oven and immediately drizzle with honey. Add sliced jalapeños and sprinkle feta cheese over the top.
- Broil. Switch the oven to broil and cook for 2–3 minutes, just until the feta softens and the honey slightly caramelizes.
- Serve and enjoy. Divide into 4 equal portions for meal prep or serve immediately for a family-style dinner.
