Ingredients

  • ½ cup melted butter
  • 1 cup granulated sugar
  • 2 eggs
  • ½ tablespoon vanilla extract
  • cup sour cream
  • cup milk
  • 2 cups all-purpose flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups chopped strawberries

For The Streusel Topping:

  • 3 tablespoons melted butter
  • ½ cup sugar
  • ½ cup flour
  • ½ tsp cinnamon

Instructions

  • Pre-heat your oven to 400.
  • In a large mixing bowl, mix together the butter & sugar for 2 minutes.
  • Once fully combined, add in 1 egg at a time & mix again.
  • Then add vanilla, sour cream, and milk. Mix again. Set aside.
  • In a smaller bowl, whisk together flour, baking powder, & salt.
  • Gently fold the dry batter into the wet batter.
  • Gently fold in the strawberries – overmixing can cause bleeding
  • Scoop into a lined muffin pan.
  • Combine all of the ingredients for the streuesel topping & generously coat each muffin
  • Bake for 25-30 minutes.
