Ingredients

  • 3 honeycrisp apples , peeled and finely diced or your preferred baking apple
  • 3 tablespoons unsalted butter
  • ⅓ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 package puff pastry thawed according to package instructions

Instructions

Prepare the Apples:

  • Start by peeling and finely dicing your apples. Using a slap chop makes this process quick and easy, plus it ensures uniform apple chunks that bake evenly.

Cook the Apple Filling:

  • In a medium-sized saucepan, melt the butter over low to medium heat.
  • Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice to the saucepan. Stir everything together and let the mixture simmer for about 10 minutes, or until the apples begin to soften and the sugar has dissolved into a syrupy consistency.
  • Sprinkle the cornstarch over the apple mixture, stirring continuously to avoid lumps. Let the filling cook for an additional 5 minutes, or until it thickens to your desired consistency.
  • Once thickened, remove the pan from heat and let the apple filling cool completely.

Assemble the Croissants:

  • Preheat your oven to 400°F (200°C) and prepare a muffin pan by lightly greasing it.
  • Roll out the puff pastry on a lightly floured surface and cut it into 8 equal squares.
  • Gently press each puff pastry square into the cups of the muffin pan, creating a small well for the filling.
  • Scoop the cooled apple pie filling into each puff pastry cup, dividing it evenly among the 8 squares.
  • Take the four corners of each pastry square and fold them slightly over the filling, leaving a small opening in the center, just like how Starbucks serves them.

Bake the Croissants:

  • Place the muffin pan in the preheated oven and bake for 25 to 30 minutes, or until the puff pastry is golden brown and crispy.

Cool and Serve:

  • Once baked, remove the croissants from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • Enjoy these delicious apple pie croissants with your morning coffee or as a sweet treat any time of day!
