Blend the cookies:
Place 35 Oreos (or your chosen cookies) into a food processor. Pulse until the cookies are finely ground, forming a crumb-like texture. If you don’t have a food processor, place the cookies in a ziplock bag and crush them with a rolling pin until you achieve a similar fine texture. The crumbs should resemble sand with no large chunks, as this will ensure a smooth mixture with the cream cheese.
Add cream cheese and blend to paste:
Add the 8 oz of room temperature cream cheese to the food processor with the cookie crumbs. Pulse until the mixture forms a thick, even paste. If needed, scrape down the sides of the processor to make sure everything blends evenly. The paste should be dense and pliable, ideal for shaping.
Chill and shape into pinecones:
Transfer the mixture to a bowl, then freeze for about 10 minutes. This short chill firms it up, making it easier to handle. Once chilled, scoop out portions of the mixture (around 2 tablespoons each) and shape into a cone. Aim for a pinecone shape by narrowing the top, and place each truffle on a parchment-lined baking sheet. Freeze again for 30 minutes to set.
Add the almond slivers:
Remove the cones from the freezer. Carefully press almond slivers into each cone, starting from the bottom and working your way up in a slightly overlapping pattern to create the pinecone effect. Don’t worry about perfection; each pinecone should have its own natural, unique look. After applying the almonds, return the pinecones to the freezer for another hour to fully set.
Prepare and apply the chocolate coating:
In a microwave-safe bowl, melt 2 cups of semi-sweet chocolate chips with 1 tablespoon of coconut oil in 30-second intervals, stirring after each interval until smooth. This should take about 2 minutes total. Dip each pinecone into the melted chocolate, covering it completely, and place it back on the lined baking sheet. Immediately sprinkle each truffle with coarse sugar to add that frosty, festive touch. Freeze for an additional 10 minutes to let the chocolate fully harden.
