For the Caramelized Onion White Cheddar English Muffins

  • 1¼ cups whole milk
  • 2 teaspoons active dry yeast
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 large egg
  • 3¼ cups bread flour
  • ½ teaspoon salt
  • 1 cup finely diced yellow onion
  • 1 tablespoon butter for caramelizing onions
  • 4 oz white cheddar cheese
  • 2 tbsp Cornmeal for dusting

For the Hot Honey Butter

  • 1 cup heavy cream
  • 2 tablespoons honey
  • ½ tsp Crushed red pepper to taste
  • ½ tsp Flaky sea salt optional

Instructions

Caramelize the Onions:

  • In a saucepan, melt 1 tablespoon butter over low heat.
  • Add finely diced onions and cook for 35–40 minutes, stirring occasionally, until soft, golden, and caramelized.
  • Set aside to cool.

Make the Dough:

  • Warm milk to 100–110°F and mix with yeast. Let sit for 5–10 minutes until foamy.
  • Add melted butter, honey, and egg. Mix to combine.
  • Add bread flour and salt. Mix until a dough forms.
  • Fold in caramelized onions and shredded white cheddar.
  • Knead dough for 8–10 minutes until smooth and elastic.

First Rise:

  • Cover and let rise for 60–90 minutes or until doubled in size.

Shape:

  • Roll dough to about ¾–1 inch thickness.
  • Cut into 12–15 rounds using a biscuit cutter.
  • Dust with cornmeal and place on baking sheet.

Second Rise:

  • Cover and let rise again for 30 minutes.

Cook:

  • Heat a skillet over low heat.
  • Cook muffins for about 8 minutes per side until golden brown.

Optional: Transfer to a 300°F oven for 5 minutes to ensure fully cooked through.

  • Cool slightly, then split with a fork for the best texture.

Hot Honey Butter:

  • Whip heavy cream for about 10 minutes until butter separates from buttermilk.
  • Strain and reserve buttermilk.
  • Beat butter with honey and crushed red pepper until light and fluffy.
  • Add flaky salt if desired.
