Ingredients

  • ½ cup unsalted butter
  • 1 cup light brown sugar
  • 3 overripe bananas
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ cup milk
  • 1 tsp red food coloring
  • ¼ cup cocoa powder
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp fine grain salt
  • 2 oz room temperature cream cheese
  • 2 tbsp room temperature unsalted butter
  • ½ tsp vanilla extract
  • ½ c powdered sugar more or less depending on your desired consistency

Instructions

Step 1: Brown the Butter

  • In a saucepan over medium heat, melt the butter. Keep stirring as it foams, then turns golden brown and smells nutty. This takes about 5 minutes.
  • Remove from heat and let cool slightly. (Trust me, the aroma alone is worth making this recipe!)

Step 2: Mix the Wet Ingredients

  • In a large bowl, whisk together brown sugar and the cooled brown butter.
  • Add in mashed bananas, egg, vanilla extract, milk, and red food coloring. Mix until combined.

Step 3: Add the Dry Ingredients

  • Sift in cocoa powder, baking powder, salt and flour. Gently fold until just combined—don’t overmix!

Step 4: Bake the Loaf

  • Pour red velvet banana bread batter into a greased or parchment-lined 9×5” loaf pan.
  • Bake at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool for at least 1 hour before glazing.

Step 5: Make the Glaze

  • Beat cream cheese, butter, vanilla, and powdered sugar together until smooth.
  • Drizzle over the cooled red velvet banana bread loaf.
