Keep stirring until the milk solids at the bottom turn a golden brown and the butter smells nutty—like toasted hazelnuts. This usually takes 5–7 minutes.Pro tip: Use a light-colored pan so you can see the color change easily. Once browned, immediately pour the butter into a mixing bowl to stop the cooking and let it cool for 5–10 minutes. Shortcut: If you’re not feeling fancy, you can skip browning and use melted butter instead. It’ll still taste amazing—just a little less nutty.
  • Cream the sugars:Add the brown sugar and granulated sugar to the cooled butter. Beat with a stand or hand mixer on medium speed for 2–3 minutes until smooth, thick, and glossy.
  • Add the eggs and vanilla:Crack in the eggs (make sure they’re room temp!) and pour in your vanilla extract. Beat for another minute until the mixture is light and creamy.
