If breakfast had a personality, these Tater Tot Egg Cups would be the fun, reliable best friend who always shows up with snacks. 💁♀️ They’re crispy, cheesy, bacon-y, and ridiculously easy to make. We’re talking brunch-level deliciousness that also just happens to be perfect for busy weekday mornings. Talk about a win-win.
I came up with this recipe on a Sunday morning when I was staring at a bag of tater tots and a nearly empty carton of eggs thinking, how can I turn this into something magical? Well, magic happened, and now I will never not have a stash of these in my fridge or freezer. Whether you’re meal prepping for the week, feeding a crowd, or just trying to make Monday mornings suck less—these little guys have you covered.
They’re totally customizable, come together in under an hour, and have just enough “wow” factor to impress your brunch guests (or your dog… Bagel definitely approved 🐶). Let’s get into it 👇

Ingredients:
-
Frozen Tater Tots
These are the heart of the recipe, forming the crispy, golden crust at the base of each egg cup. When baked, they crisp up beautifully, giving you a sturdy and savory bite that contrasts the soft egg filling. Plus, they’re pre-seasoned and convenient, making this recipe super easy to throw together. -
Large Eggs
Eggs are the protein-rich binder that hold everything together in the cups. They bake up light and fluffy, filling each tater tot shell perfectly. Without the eggs, you’d just have cheesy potato bites—not nearly as satisfying or meal-worthy! -
Cottage Cheese
Cottage cheese adds creaminess and a protein boost without making the cups too heavy. Blending it into the egg mixture ensures a velvety texture and subtle tang, which balances the salty bacon and cheese. It’s also a smart swap to lighten up the recipe compared to using heavy cream or more shredded cheese. -
Shredded Cheese
This adds gooey, melty richness to every bite. You can use any shredded cheese you like—Mexican blend, cheddar, white cheddar—but I love the contrast of the sharp cheese with the mellow eggs and crispy potatoes. Cheese also helps the tops of the cups brown up beautifully in the oven. -
Bacon
Bacon brings smoky, salty crunch that crowns the egg cups with flavor. I recommend cooking it until crisp and chopping it finely so you get a little bit in every bite. If you want a vegetarian version, you can easily skip it or swap in plant-based bacon or sautéed veggies. -
Hot Sauce
A splash of hot sauce adds just the right amount of zing to wake up the flavors without making it too spicy. If you like things milder, reduce the amount or leave it out; if you like a kick, go ahead and double it! -
Everything but the Bagel Seasoning
This seasoning adds a little garlicky, oniony, sesame seed crunch to the egg mixture. It’s totally optional, but I love the added flavor dimension. You can swap it for Italian seasoning, smoked paprika, or even just a little salt and pepper.
Why You’ll Love This Recipe

-
Protein-packed and satisfying thanks to the eggs and cottage cheese.
-
Highly customizable with your favorite cheeses, toppings, or veggies.
-
Make-ahead friendly and great for busy mornings or hosting brunch.
Equipment Needed
-
Silicone Muffin Pan or Regular Muffin Pan – I highly recommend using a silicone muffin pan for this recipe—it makes popping out the finished egg cups so easy, no sticking, no mess. If you don’t have one, no worries! Just make sure to grease a regular muffin pan really well with nonstick spray or a little oil.
-
Blender or Whisk + Bowl – You can either toss your eggs, cottage cheese, cheese, and seasonings into a blender for a super smooth, creamy filling or whisk everything together by hand in a large mixing bowl if you prefer a little more texture.
-
Skillet – For crisping up the bacon. A small or medium nonstick skillet works perfectly.
-
¼ Cup Measuring Cup or Small Glass– This is what you’ll use to press down the baked tater tots into the base of the muffin pan, creating that little crispy cup shape. Anything small that fits into the muffin well will work!
Substitutions & Modifications
-
Swap the bacon for cooked sausage, ham, or a vegetarian meat alternative.
-
Use any cheese you love: sharp cheddar, pepper jack, gouda, or mozzarella.
-
Skip the hot sauce if you’re sensitive to spice or replace it with a dash of smoked paprika or chili powder.
-
Add veggies! Try sautéed spinach, bell peppers, mushrooms, or green onions mixed into the egg blend.
