If fall could be baked into one cake, this would be it. My Brown Butter Salted Caramel Pumpkin Crunch Cake is cozy, decadent, and layered with everything you want in a fall dessert: nutty brown butter pumpkin cake, tangy cream cheese frosting, gooey homemade salted caramel, and a spiced crumble that gives you the perfect crunch in every bite.
I made this cake for my little brother’s 25th birthday (he’s the real MVP when it comes to helping me choose recipes), and it turned out so insane that I knew I had to share it here. If you’re a salted caramel lover, or just a fan of fall flavors, this cake is about to become your new obsession.

And here’s the best part: you don’t need to be a cake decorator to make it. The cake bakes in one 9 x 13 pan, then gets cut into rounds and stacked inside a lined 6-inch cake pan with frosting, caramel and crunch between every layer. When you unmold it, you get those gorgeous exposed layers with zero fancy frosting skills. It’s the perfect showstopper for Thanksgiving, Friendsgiving or any fall birthday.
P.S. Chill the assembled cake for at least an hour before you unmold and slice it. That’s what gives you those clean, bakery-perfect layers!

Ingredients for Salted Caramel Pumpkin Crunch Cake
Here’s what goes into each layer and why. Find the exact measurements in the printable recipe card below.
For the Brown Butter Pumpkin Cake
- Brown butter: adds a nutty, toffee-like depth that pairs beautifully with pumpkin and gives the cake a moist, rich crumb.
- Light brown sugar: warm, caramel-y sweetness that keeps the cake soft.
- Eggs: give the cake structure and stability for stacking.
- Sour cream: adds moisture and tang for a tender, bakery-style crumb.
- Pumpkin puree: the star of the show. Use 100 percent pure pumpkin, not pie filling.
- Vanilla extract: adds warmth and depth.
- All-purpose flour and baking powder: structure and a soft, even rise.
- Pumpkin pie spice, cinnamon and salt: that unmistakable cozy fall flavor.
For the Spiced Crunch Topping
- Melted butter, flour, brown sugar, vanilla and pumpkin pie spice: baked on a sheet pan until golden, then broken into crunchy chunks. This is the “crunch” that makes the cake!
For the Homemade Salted Caramel
- Granulated sugar: melted until deep amber.
- Butter and heavy cream: whisked in to make a smooth, rich caramel.
- Salt: the sweet-salty magic that ties the whole cake together. Store-bought caramel works too!
For the Cinnamon Cream Cheese Frosting
- Cream cheese and butter: at room temperature for a smooth, fluffy, tangy frosting.
- Powdered sugar, vanilla and cinnamon: sweet, spiced and perfectly spreadable.
For the Milk Wash
- Whole milk and vanilla: brushed onto each cake layer to keep it extra moist.
Tips for the Best Layer Cake
- Watch the brown butter closely. Use a light-colored pan and pull it as soon as it smells nutty.
- Don’t overmix the batter. Fold the dry ingredients in for no more than 30 seconds.
- Cool the cake completely before cutting the rounds and layering.
- Be careful with the caramel. The cream bubbles up a lot when you add it, so pour slowly.
- Use plastic wrap or an acetate strip to line the cake pan so the layers stay tall and release cleanly.
- Chill before slicing. At least 1 hour for clean layers.
- Use a serrated knife for cutting even rounds and clean slices.
How to Assemble a Layer Cake in a Cake Pan
Once the 9 x 13 cake has cooled, cut out two 6-inch circles and two half circles. Line a 6-inch cake pan with plastic wrap. Place one full circle in the bottom, using the half circles to fill any gaps, and brush it with milk wash.
Add a layer of frosting, a drizzle of caramel and a handful of crunch topping. Repeat the layers, finishing with frosting, caramel and crunch on top. Chill for at least an hour, then lift the cake out using the plastic wrap. That’s it! No turntable or offset spatula skills required.

Make Ahead Tips
Bake the cake, crunch topping and caramel up to 2 days ahead. Keep the cake wrapped at room temperature or in the fridge, the crunch in an airtight container, and the caramel in a jar in the fridge (warm it slightly before drizzling). Assemble the day you serve it, or the night before for a stress-free Thanksgiving.
Substitutions and Variations
- Gluten-free: use a 1:1 gluten-free flour blend.
- Sour cream: swap in plain Greek yogurt for similar tang and texture.
- Homemade pumpkin pie spice: mix cinnamon, nutmeg, ginger and cloves.
- Caramel: store-bought caramel sauce works in a pinch.
- Lighter frosting: swap the cream cheese frosting for whipped cream frosting.
- Sheet cake version: skip the layering. Frost the cooled 9 x 13 cake right in the pan and top with caramel and crunch.
Equipment You’ll Need
- Saucepan: for browning butter and making caramel.
- Stand mixer or hand mixer: for the batter and frosting.
- Mixing bowls: for the wet, dry and crumble mixtures.
- 9 x 13 baking pan: for baking the pumpkin cake.
- Sheet pan: for baking the crunch topping.
- 6-inch cake pan (or cake ring) lined with plastic wrap, to stack and layer the cake.
- Whisk and spatula: for mixing and folding.

Frequently Asked Questions
Can I make this ahead of time?
Yes! Bake the cake, crumble and caramel up to 2 days ahead, then assemble the day you serve it.
Can I make this without the caramel?
Absolutely. It’s still delicious, but the caramel takes it to the next level.
Do I need a 6-inch cake pan?
A 6-inch pan or cake ring gives you the tall, layered look. If you don’t have one, make the sheet cake version and frost it right in the 9 x 13 pan.
Why did my caramel seize or harden?
Usually the cream was added too fast or was too cold. Warm the cream slightly and pour it in slowly while whisking. If it hardens in the fridge, warm it for a few seconds before drizzling.
Can I use store-bought caramel?
Yes! A good jarred salted caramel works beautifully. Warm it slightly so it drizzles easily.
