Okay, confession time: I went apple picking last weekend, and in true overachiever fashion, I walked out with the BIGGEST bag of apples I’ve ever seen in my life. You think, “Oh, I’ll just grab a few Honeycrisps,” and suddenly you’re lugging home 15 pounds of apples like you’re training for a strongman competition. So now, my kitchen has turned into an apple factory and I’ve been testing every apple recipe under the sun.
These Salted Caramel Apple Crumble Buns might just be my favorite thing I’ve baked all season. We’re talking soft, fluffy bakery-style buns filled with creamy cheesecake custard, gooey stovetop apple pie filling, buttery crumble, and a drizzle of salted caramel that makes them taste like FALL IN BUN FORM. Imagine a cinnamon roll, an apple pie, and a cheesecake had a baby. That’s what these are.
I tested this recipe three different ways before I landed on the version you’re about to make. The first batch had way too much custard and overflowed everywhere (still delicious, just messy). The second batch I tried baking the apples inside raw and the buns came out soggy. THIS version, where you cook the apples down first into a jammy pie filling, is the one. The texture is perfect, the flavor is layered, and they look like something straight out of a fancy bakery case.
If you’re an apple recipe person, you have to add these to your fall baking rotation. They pair perfectly with my Brown Butter Apple Crumb Cake and my Salted Caramel Apple Pie Cookies for the ultimate fall baking weekend. Trust me, your house is going to smell INCREDIBLE.
P.S. If you’re short on time, the dough can rise overnight in the fridge. Just shape, fill, and bake in the morning for fresh bakery-style buns with your coffee. Future you will be SO happy.

Ingredients:
-
Whole Milk: Milk creates a soft, tender dough by adding richness and moisture. The natural fats in whole milk help the yeast activate properly, giving you buns that rise tall and fluffy. Make sure it’s warm (about 100–110°F) so it wakes up the yeast without killing it—think cozy bathwater.
-
Active Dry Yeast: Yeast is the magic behind those bakery-style buns—it’s what makes them puff up instead of baking into dense hockey pucks. When combined with warm milk and sugar, it comes alive and starts feeding, releasing little gas bubbles that make the dough rise. If your yeast doesn’t foam after 10 minutes, it’s either expired or your milk was too hot.
-
Granulated Sugar: Sugar pulls double duty here: it feeds the yeast to get the rise going, and it sweetens the dough just enough. It also helps with browning, giving you that golden, glossy bakery crust. Too much sugar can slow yeast down, so the amount here is just right for balance.
-
Egg: Eggs enrich the dough with both protein and fat, helping it hold structure while staying soft. They also add moisture, preventing the buns from drying out during baking. Plus, they give that gorgeous golden tint when baked.
-
All-Purpose Flour: Flour is the backbone of your dough—it’s where the gluten comes from, which traps air pockets and makes the buns airy and chewy. I use all-purpose because it keeps the texture soft and light, but if you want chewier buns, bread flour works too.
-
Fine-Grain Salt: Salt may seem small, but it’s essential. It enhances every flavor in the dough, balancing the sweetness and making the apple filling pop even more. It also strengthens the gluten network, so your buns bake up tall instead of spreading flat.
-
Butter: Butter is what gives the buns their rich, soft, melt-in-your-mouth crumb. It coats the gluten strands, keeping the dough tender instead of tough. Adding it in slowly after kneading helps it incorporate evenly for that perfect texture.
-
Cream Cheese: The base of the custard filling, cream cheese adds tanginess that balances the sweetness of the apples and caramel. It creates a creamy, cheesecake-like center that doesn’t just melt away in the oven. Room temperature is key—you don’t want lumps in your filling.
-
Heavy Cream: Heavy cream thins out the cream cheese just enough to make it smooth and pipeable. It adds a silky richness that feels luxurious without being too heavy. You want the custard thick enough to hold shape, but soft enough to spread when you bite in.
-
Vanilla Extract: Vanilla is the flavor glue—it ties everything together. In both the custard and the crumble, it adds warmth and depth without overpowering the apple filling. Pure vanilla extract makes a huge difference here.
-
Powdered Sugar: Powdered sugar sweetens the cream cheese custard without making it gritty. Because it’s so fine, it blends in seamlessly for a smooth, fluffy filling. It’s also key for creating that melt-in-your-mouth texture.
-
Apples:The star of the show. Apples bring natural sweetness, a little tartness, and that cozy fall flavor. Cooking them on the stovetop first ensures they soften into that perfect apple-pie filling without releasing too much liquid into your buns.
-
Brown Sugar: Brown sugar deepens the apple filling and crumble with a rich, molasses sweetness. It caramelizes as it bakes, creating warm, almost toffee-like notes. It’s what makes the apple filling taste like pie.
-
Cinnamon: Cinnamon is the essential spice in apple desserts. Just half a teaspoon gives the filling warmth and coziness without overpowering the apples. It’s fall in a pinch.
-
Cornstarch: Cornstarch thickens the apple filling so it doesn’t run all over your buns. It locks in those apple juices into a glossy, pie-like consistency. Without it, you’d end up with soggy bottoms.
-
Crumble (Butter + Flour + Brown Sugar + Vanilla): The crumble topping adds contrast: crunchy, buttery, and golden. It balances the soft custard and gooey apples with texture. Plus, it makes the buns look rustic and bakery-perfect.
-
Salted Caramel: The finishing touch. Salted caramel adds a sweet-salty richness that elevates the whole bun. It also makes them look like something straight out of a bakery case.
Why You’ll Love This Recipe
- Bakery-sized indulgence: These are GIANT buns, perfect for sharing (but let’s be honest, you probably won’t want to).
- Layers of flavor and texture: Tangy cream cheese custard, warm cinnamon apples, crunchy buttery crumble, and salted caramel all in one bite.
- Make-ahead friendly: The dough can rise overnight in the fridge, making it easy to prep ahead for weekend brunch.
How to Pick the Best Apples for Baking:
The apple variety you pick genuinely changes the final result. For these buns, you want apples that hold their shape when cooked and balance sweet with a little tartness. Honeycrisp is my personal favorite because it’s crisp, slightly tart, and breaks down into the perfect jammy texture without turning to mush. Granny Smith works beautifully if you want a more pronounced tart contrast to the sweet caramel. Fuji and Gala are great if you’re going for a sweeter filling. If you can’t decide, do what I do and use a MIX. The blend of varieties gives the most complex, bakery-quality flavor.
Equipment Needed:
-
Stand Mixer: Makes kneading easy and ensures smooth, elastic dough.
-
Mixing Bowls: Keeps each component—custard, apples, crumble—organized.
-
Piping Bag: Essential for neatly filling the buns with custard.
-
Baking Sheet + Parchment: Prevents sticking and makes cleanup a breeze.
-
Skillet: For making that stovetop apple filling.

Substitutions & Modifications
-
Apples: Any variety works—Honeycrisp for sweet, Granny Smith for tart.
-
Cream Cheese: Use mascarpone for a milder, creamier filling.
-
Caramel: Store-bought is fine, but a homemade batch makes these next-level.
-
Make it nutty: Add chopped pecans or walnuts to the crumble.
