And the best part? No corn syrup. None. Not even a little. Just a few simple ingredients, a bit of whipping time, and some patience while they set. That’s it.
I’ve been making big batches and packaging them up in mixed packs of four flavors to gift to friends and family, and it honestly might be one of my favorite homemade holiday gifts ever. They feel festive and special, but once you learn the base recipe, they’re surprisingly easy to customize. Let’s make them.

Variations
All of these variations follow the exact same base recipe. The only difference is what you add either during whipping or right at the end.
- Vanilla Bean: Prepare the recipe as written using vanilla bean paste for a classic, cozy marshmallow flavor.
- Sugar Cookie Sprinkle: Add 1/2 teaspoon almond extract at the end of whipping. Fold in 1/2 cup sprinkles and top with extra sprinkles after pouring into the pan.
- Peppermint Mocha: Add 1/2 cup cocoa powder when combining the gelatin mixture and hot sugar syrup. Add 1 teaspoon peppermint extract at the end and top with crushed candy canes.
- Coffee: Add 2 tablespoons instant espresso powder when combining the gelatin mixture and hot sugar syrup. Add vanilla at the end as directed.
- Gingerbread: Add 1 teaspoon ground ginger, 1 teaspoon cinnamon, and a pinch of cloves at the end of whipping.
- Hot Cocoa: Add 1/3 to 1/2 cup cocoa powder during mixing. Fold in mini chocolate chips at the end if desired.
- Cranberry Orange: Add 1 tablespoon orange zest and a few drops of orange extract at the end. Top with finely chopped dried cranberries.
- Eggnog: Add 1 teaspoon nutmeg and 1/2 teaspoon rum extract (optional) at the end of whipping.
Substitutions & Modifications
- Vanilla bean paste: Swap with 1 tablespoon vanilla extract if needed.

Homemade Fluffy Marshmallows (No Corn Syrup)
Ingredients
Marshmallows
- ½ cup cold water
- 2 packets Knox unflavored gelatin
- ½ cup water
- 2 cups granulated sugar
- 1 tablespoon vanilla bean paste
For the Pan
- Nonstick spray or neutral oil
- Powdered sugar for dusting
Instructions
- Add the cold water to the bowl of a stand mixer. Sprinkle the gelatin over the water and let sit for 10 minutes to bloom.
- Grease an 8×8 pan and generously dust with powdered sugar. Set aside.
- In a small saucepan, combine the water and granulated sugar. Stir over medium heat until the sugar dissolves.
- Bring the mixture to a boil and cook until it reaches 240°F on a candy thermometer.
- With the mixer running on low, very slowly pour the hot sugar syrup into the bloomed gelatin. Mix on low for 2 minutes.
- Increase the mixer speed to high and whip for 10–15 minutes until thick, glossy, and fluffy.
- Add the vanilla bean paste and mix just until combined.
- Immediately pour the marshmallow mixture into the prepared pan and smooth the top. Dust lightly with powdered sugar.
- Let set at room temperature for at least 6 hours or overnight.
- Turn out onto a powdered sugar–dusted surface, slice into 16 pieces, and toss each piece in powdered sugar to prevent sticking.

Variations
Sugar Cookie Sprinkle- Add 1/2 teaspoon almond extract at the end of whipping.
- Fold in 1/2 cup sprinkles.
- Sprinkle additional sprinkles on top after pouring into the pan.
- Add 1/2 cup cocoa powder when combining the gelatin mixture and hot sugar syrup.
