Cheesecake Stuffed Chocolate Chip Cookies Recipe
Ingredients
For the Chocolate Chip Cookie Dough
- 1 cup unsalted butter
- 1 ¼ cups brown sugar
- ⅓ cup granulated sugar
- 1 egg
- 1 egg yolk
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 dark chocolate bar chopped into varying chunks
- 1 cup semisweet chocolate chips
For the Cheesecake Filling
- 8 oz cream cheese room temperature
- 1 egg
- ½ cup granulated sugar
Instructions
- Brown the butter in a saucepan at medium heat. Monitor and stir throughout the process to avoid burning. This will take 5-10 mins.
- Once brown, transfer to your mixing bowl & let the butter cool down for 10 mins.
- Once cool, beat with brown sugar & granulated sugar. This will take about 2 minutes.
- Once fully combined, add in vanilla extract, egg, & egg yolk. Mix again.
- Then fold in flour, baking soda, and a pinch of salt.
- Fold in semisweet chocolate chips & chopped dark chocolate
- Refrigerate for 30 mins (up to 24 hrs)
- Make the cheesecake filling my beating together the cream cheese, egg, & sugar in a stand mixer for 2-3 minutes.
- Scoop into tbsp sized balls onto parchment paper and freeze for 30 mins.
- Place frozen cheesecake mixture in the center of the cookie dough and bake.
- Bake at 350 for 10-12 minutes.
