Ingredients:
Bananas: Bananas add natural sweetness, moisture, and flavor to the bread. Overripe bananas are ideal because they break down more easily, creating a smoother batter and sweeter flavor. They also provide binding properties, helping the bread hold together without needing additional fats.
Unsalted Butter: Butter gives the bread a rich flavor and tender texture. Browning the butter adds a nutty, caramelized depth that enhances the sweetness of the bananas and Oreos. It also helps bind the ingredients, creating a moist crumb.
Light Brown Sugar: Brown sugar contributes moisture and sweetness while giving a slight caramel flavor that complements the brown butter and bananas. The molasses in brown sugar also enhances the bread’s tenderness, making the texture soft and gooey.
Egg: Eggs provide structure and stability, helping the bread rise and set as it bakes. It binds the ingredients together and adds moisture, ensuring that the bread doesn’t crumble when sliced.
Vanilla Extract: Vanilla extract enhances the overall flavor of the bread, adding warmth and depth. It helps bring out the sweetness of the bananas and brown sugar, tying all the flavors together.
Whole Milk: Milk adds moisture and tenderness, making the bread soft and rich. It also helps blend the dry ingredients smoothly into the wet mixture, creating a cohesive batter. Additionally, milk in the icing helps thin it out to the perfect consistency for drizzling.
All-Purpose Flour: Flour gives the bread its structure, providing the necessary gluten to hold everything together. The right amount of flour ensures the bread is soft but not too dense, while also helping balance the moisture from the bananas and butter.
Baking Powder: Baking powder acts as a leavening agent, allowing the bread to rise and achieve a light, fluffy texture. Without it, the bread would be dense and flat.
Salt: Salt enhances the flavors of the bread, balancing out the sweetness of the sugar and bananas. A small amount is all that’s needed to give the bread a well-rounded taste and keep it from being overly sweet.
Crushed Oreos: Oreos bring a delightful crunch and chocolate flavor to the bread, providing a contrast in both texture and taste. The variety of large and small pieces ensures a fun bite in every slice.
Cream Cheese: Cream cheese gives the icing a rich, tangy flavor that pairs perfectly with the sweetness of the bread. It adds creaminess, creating a smooth and decadent topping.
Powdered Sugar: Powdered sugar sweetens the icing while giving it a smooth texture that’s easy to drizzle. It also thickens the icing, ensuring it sets nicely on top of the bread.
What is Brown Butter?
Brown butter, also known as “beurre noisette,” is butter that’s cooked over medium heat until the milk solids caramelize, turning the butter a golden brown color. The process adds a deep, nutty, and slightly sweet flavor, which enhances baked goods like cookies, cakes, and banana bread. To brown butter, you simply melt it in a saucepan, then cook it until it starts to foam and develop a nutty aroma. Be sure to watch it closely, as it can quickly go from browned to burnt!

Ingredients
For the Banana Bread
- 3 overripe bananas, mashed
- ½ cup unsalted butter
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ⅓ cup whole milk
- 1 ½ cups crushed Oreos reserve 1/4 cup for topping
For the Cream Cheese Icing
- 2-3 tablespoons cream cheese room temperature
- 1 tablespoon milk
- 1 cup powdered sugar
Instructions
- Start by browning your butter. In a medium saucepan, melt 1/2 cup of unsalted butter over medium heat, stirring constantly. The butter will start to foam, and then it will turn a golden brown and smell nutty. Be careful not to burn it! Once it’s beautifully browned, remove the pan from heat and let the butter cool for about 10 minutes.
- In a large mixing bowl, combine your cooled brown butter and 1 cup of brown sugar. Mix until smooth. Add in the mashed bananas and stir until everything is well combined.
- Next, add your egg, vanilla extract, and 1/3 cup of milk. Mix until incorporated.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt. Gently fold in 1 1/4 cups of crushed Oreos into the dry ingredients. Make sure to leave some chunks of Oreos for that extra texture—both small and big pieces work great!
- Gradually add the dry ingredients into the wet mixture. Stir until just combined, being careful not to overmix. Once the batter is ready, fold in 3/4 of the Oreo mixture.
- Line a 9×5 inch loaf pan with parchment paper or grease it well. Pour the batter into the prepared pan, spreading it out evenly. Sprinkle the remaining crushed Oreos on top.
- Bake at 350°F (175°C) for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Every oven is different, so start checking around the 55-minute mark.
- Once the brown butter oreo banana bread is done, let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- While your bread is cooling, whip up the cream cheese icing. In a small bowl, combine 2-3 tablespoons of room-temperature cream cheese with 1 tablespoon of milk. Add in 1 cup of powdered sugar, and whisk until smooth and drizzle-able.
- Once the brown butter oreo banana bread has cooled, drizzle the cream cheese icing generously over the top. Slice and enjoy!
