For the Churro Coating
- 3 tablespoons melted butter
- ½ cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Pre-heat oven to 350.
- Beat room temperature butter & brown sugar in a stand mixer for 2 minutes.
- Once fully combined, add in three mashed bananas. Mix again
- Then add in the egg, & vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and baking soda. Then fold into the wet batter.
- In a separate bowl, mix together the cinnamon & sugar.
- Scoop half of the banana batter into a greased minimuffin pan.
- Bake for 12-14 minutes.
- Once slightly cooled, toss in melted butter, then in the cinnamon sugar mixture
