Ingredients

For the Muffins

  • Β½ cup melted butter
  • 1 cup granulated sugar
  • 2 eggs
  • Β½ tablespoon vanilla extract
  • β…“ cup sour cream
  • β…“ cup milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ΒΌ teaspoon salt
  • 2 cups fresh or thawed frozen peaches tossed in 2 tablespoons of flour

For the Streusel Topping

  • 2 tablespoons melted butter
  • β…“ cup granulated sugar
  • β…“ cup all-purpose flour

Instructions

  • Pre-heat oven to 375.
  • In a bowl, mix together melted butter with granulated sugar.
  • Then add in two eggs (one at a time).
  • Then mix in vanilla extract, sour cream, & milk.
  • In a separate bowl, combine flour, baking powder, baking soda, & salt.
  • Gently fold the dry ingredients into the wet mixture.
  • Toss 2 tbsp of flour with fresh or thawed frozen peaches.
  • Then fold into the batter.
  • Put your muffins in a lined muffin tray.
  • Now let’s make the best part: the streusel. Combine melted butter with sugar & flour. Add on top of the muffin batter.

  • Mini muffins: 15-18 mins
  • Standard muffins: 24-26 mins
  • Large muffins: 32-35 mins
