Make the Blueberry Syrup:
In a small saucepan, combine the blueberries, brown sugar, and water. If you prefer your latte extra sweet, feel free to add more sugar—just keep the sugar-to-water ratio equal by adding more water as well.
Bring the mixture to a gentle simmer over medium heat. Let it simmer for about 5 minutes, allowing the blueberries to soften.
After 5 minutes, use a spoon or muddler to gently mash the blueberries, releasing more of their juices. Continue to simmer for an additional 5 minutes, stirring occasionally.
Once the mixture has thickened slightly, remove the saucepan from heat. Strain the blueberry mixture through a fine mesh strainer into a glass jar or bowl, pressing down on the solids to extract as much syrup as possible. Discard the solids, and let the syrup cool to room temperature.

Assemble the Iced Latte:
In a tall glass, add 2 tablespoons of the blueberry syrup. (You can store the remaining syrup in the fridge for up to a week—it’s perfect for adding to more lattes or drizzling over pancakes.)
Add a handful of ice to the glass.
Pour in 6 oz of your preferred milk.
Finally, pour in the freshly brewed espresso shots.
Optional: Make the cold foam by frothing together the heavy cream, milk, and syrup. You can do this by using an electric frother, using a handheld frother, using a blender, or shaking in a jar with a lid.
