And with Easter right around the corner, I wanted to create the perfect cookie to celebrate—something buttery, sweet, and bursting with strawberry goodness.
Buuuut here’s the thing—strawberries in cookies? Tricky. Fresh ones release too much moisture, and if you’re in Ohio like me, getting juicy, flavorful berries in early spring is basically like winning the lottery. Enter freeze-dried strawberries. They’re tiny flavor bombs, packing all the sweet, tangy intensity of fresh berries without the added liquid. Pair that with creamy white chocolate and rich, nutty brown butter, and you have a cookie that’s basically springtime in dessert form. 🌸✨ Now let’s bake my strawberries and cream cookies!

- In a large mixing bowl, combine the brown sugar, granulated sugar, and warm brown butter. Mix until well combined.
4. Add Eggs & Vanilla
- Add the egg, egg yolks, and vanilla extract. Mix until smooth and creamy.
5. Incorporate Dry Ingredients
- In a separate bowl, whisk together the flour, baking powder, salt, and cornstarch (if using). Gradually add the dry ingredients to the wet, mixing until just combined.
6. Fold in Mix-Ins
- Gently fold in the white chocolate chips and crushed freeze-dried strawberries.
7. Chill the Dough
- Cover and chill the dough in the refrigerator for at least 30 minutes (or up to 24 hours). This step helps control spread and enhances flavor.
8. Form Cookie Dough Balls
